Take leftover turkey and shred it by hand (about 2-3 cups)
In a large skillet, heat 2 tablespoons of butter (or olive oil) over medium heat.
Add the shredded turkey to the skillet and warm thoroughly while stirring occasionally.
Once the turkey is warm, add 2 tablespoons of flour and stir for 1-2 minutes.
Add 2 cups of chicken broth and bring to a boil; then lower the heat and simmer (stirring occasionally) for 10-20 minutes, until the skillet contents reach the desired consistency.
Salt and pepper mixture to taste
Pour/spread the mixture over toasted bread and serve
