Ingredients

  • 2-3 cups leftover turkey
  • 2 tablespoons of butter (or olive oil)
  • 2 tablespoons of flour
  • 2 cups of chicken broth
  • Toasted bread of choice
  • Salt and pepper (to taste)

Instructions

  1. Take leftover turkey and shred it by hand (about 2-3 cups)
  2. In a large skillet, heat 2 tablespoons of butter (or olive oil) over medium heat. 
  3. Add the shredded turkey to the skillet and warm thoroughly while stirring occasionally.
  4. Once the turkey is warm, add 2 tablespoons of flour and stir for 1-2 minutes.
  5. Add 2 cups of chicken broth and bring to a boil; then lower the heat and simmer (stirring occasionally) for 10-20 minutes, until the skillet contents reach the desired consistency.
  6. Salt and pepper mixture to taste
  7. Pour/spread the mixture over toasted bread and serve
  8. OPTIONAL: Add cheese, cranberries, onions, chives, fresh spinach–or whatever leftovers sound appetizing–to the turkey mixture.
